Papa Dethe's Waffles

These are a great source of protein for kids, between the walnuts and the extra eggs. You can also throw in 3 teaspoons of protein powder, if that's a goal. For the lactose intolerant, you can replace the milk and yogurt with soy or other non-animal milk. If you use flavoured milks (like vanilla soy milk) reduce the sugar and drop the vanilla because you'll already be getting that from the milk.

Dry Ingredients

  • 2 cups whole wheat flour

  • ½ cup oat bran

  • 1 teaspoon salt

  • 3 teaspoons baking powder

  • 4 rounded teaspoons brown sugar

  • 1 cup walnut pieces

Wet Ingredients

  • 6 eggs

  • 1 cup milk

  • 1 cup yogurt

  • ½ cup canola (or any light-flavoured) oil

  • 2 teaspoons vanilla extract

Mix the dry and wet ingredients seperately, then together. Cook in a well-oiled waffle iron. Makes about 10 waffles in my waffle iron. Good hot, but also make great leftovers to warm another day, just let them sit out to dry a bit before putting them in a ziploc freezer bag and store in the fridge or freezer.
